    Ayshim’s Pantry: Store-Bought Erişte

    Erişte has always been a huge part of my Turkish pantry and the good news is you can get a good quality erişte in Sydney!

    What is Erişte?
    Erişte is a type of Turkish egg noodle, also known as kesme. Traditionally, it is made of flour, eggs, water, and salt, and then dried for winter. Very much like pasta. My grandmother used to make kesme in her garden back in those days and dry them on cloth sheets. That’s homemade eriste, and that’s not what I’m talking about here. I’m talking about the type of erişte you buy from a Turkish grocery store.

    These life-saving noodles look like Italian tagliatelle, only cut short. They come in 500g packs and cook fast.

    Erişte is such a versatile ingredient, well-known for its absorbability. So much so that you can add it to soups, a buttered version can be eaten as a side dish, or you can make it the base of a dish called oturtma (as seen below).

    Where to Buy Erişte?
    In Sydney, I buy mine from Turkish grocery stores in Auburn. There is one particular Turkish general store that I quite like, Arzum Market. They also deliver Australia-wide.

    There is another online shop where you can buy pretty much every Turkish ingredient; however, I do not recommend it. My first and last order was so terrible, it made me write a belting review, which you can read here on Google.
